Single Serving Protein Cookie
Equipment
- 2 mixing bowls
- 1 baking sheet
Ingredients
- 3 tbsp vanilla protein powder (16 g, I use Diesel New Zealand Whey Protein Vanilla Ice Cream in this recipe)
- 1 tbsp calorie free sweetener of choice (or to taste after this cookie has been made a few times)
- 1/16 tsp each: baking soda, salt
- 2 tbsp mini dark chocolate chips
- 2 tbsp natural peanut butter (30 g, smooth for best result)
- 1 tbsp egg white
- 1/4 tsp pure vanilla extract
Instructions
- Preheat oven to 350 Degrees Fahrenheit and cover a baking sheet with tinfoil. Coat it lightly with cooking spray to prevent sticking.
- If not already soft, gently warm peanut butter until easily stir-able.
- Mix dry ingredients in a small bowl.
- In a separate bowl mix wet ingredients, then add wet to form a cookie dough-like texture.
- Press into a cookie shape.
- Bake 7 minutes.
- Let cool completely before handling; the cookie firms up as it cools.
