One Pot Apple Cinnamon Protein Bars

  • In a large pot with deep sides, bring 2 cups of water to a boil. Add dates and reduce to medium heat. Simmer, covered for 30-40 minutes. Stirring occasionally.
  • While waiting for dates to cook, preheat oven to 350 Degrees Fahrenheit.
  • Coat a 19 x 13-inch cake pan with oil.
  • When dates have been stewed down, remove from heat.
  • Add remaining ingredients and fold until fully combined.
  • Spread batter into prepared pan and bake until golden brown, 25-30 minutes.
  • Cut into 16 bars (2 x 8).
