In a large pot with deep sides, bring 2 cups of water to a boil. Add dates and reduce to medium heat. Simmer, covered for 30-40 minutes. Stirring occasionally.
While waiting for dates to cook, preheat oven to 350 Degrees Fahrenheit.
Coat a 19 x 13-inch cake pan with oil.
When dates have been stewed down, remove from heat.
Add remaining ingredients and fold until fully combined.
Spread batter into prepared pan and bake until golden brown, 25-30 minutes.
