With the food processor mixing blade attached, add all of the ingredients to food processor bowl.
Smooth filling into in-baked pie shell.
Bake on the center rack 35 minutes (it will be super-soft after baking, which is what you want).
Allow to cool completely before transferring to the fridge to set for at least 1 hour.
Slice into 8 even size pieces and serve.

*I chose to use Wholly Wholesome's Gluten Free Pie Crust (Purchased from Famous Foods in Vancouver, BC - though this brand/suitable subs are available at many health food stores).
