Lightened up Clam Chowder

This chowder is lower in sodium than many commercial products as the fresh ingredients that it contains (including onions, turnip, thyme, and parsley) contribute to this soup’s delicious flavour.

  • Heat oil in a large deep pan.
  • Add onions when pan is hot and cook until translucent.
  • Add flour and stir to completely dissolve and thicken.
  • Add milk, broth, clam juice, potatoes, turnip, salt & pepper, bay leaves, and thyme.
  • Cook on low until potatoes and turnips are soft (~10 minutes).
  • Meanwhile, roughly puree beans in a blender or food processor. Add to mixture above and continue monitoring potatoes & turnips for doneness.
  • Add clams and corn and cook for another 5 minutes to allow flavours to blend.
  • Remove bay leaves and serve – garnishing with fresh parsley - or cool fully and refrigerate to enjoy at a later date.
