High-Protein Apple Cinnamon Baked Oatmeal recipe

Instructions
 

  • Preheat oven to 350°F. Lightly grease an 8×8-inch baking dish with reduced-calorie cooking oil spray.
  • In a large bowl, combine the oats, protein powder, cinnamon, baking powder, and salt.
  • Add the eggs, almond milk, Greek yogurt, maple syrup, and vanilla. Stir until well combined.
  • Fold in diced apples.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 30–35 minutes, or until the centre is set and the top is lightly golden.
  • Allow to cool for 10 minutes before cutting into 6 equal servings.

Notes

Use a firm, crisp apple such as Honeycrisp, Gala, or Ambrosia for natural sweetness and texture.
For extra apple flavour, sprinkle additional cinnamon over the top before baking.
Add ½ cup chopped walnuts or pecans for extra crunch and healthy fats (keep in mind this will increase the calories and fat per serving).
Store leftovers in an airtight container in the refrigerator for up to 4 days. Enjoy cold or reheat in the microwave for a quick breakfast.
